Cup of Dark Chocolate Espresso Cake

Ingredients:
¼ cup quick oats
¼ cup dark cocoa powder
2-3 Tbsp. sweetener (of choice)
½ tsp. baking powder
Pinch coarse salt
¼ cup cold brew coffee
3 Tbsp. oil
1 large egg
½ tsp. vanilla extract
2 Tbsp. dark chocolate chips
Instructions
In a small bowl, whisk together quick oats, cocoa powder, sweetener, baking powder and salt.
In a separate small bowl, whisk together coffee, oil, egg and vanilla extract. Pour wet ingredients into the bowl with dry and whisk, just until combined. Fold in chocolate chips.
Coat a large microwaveable coffee mug with cooking spray. Pour batter into mug. Microwave on high for 90 seconds.
